With the increasing popularity of food trucks in the state and Soldotna, the city is considering food truck specific policies.
Keith Baxter with the Planning and Zoning Commission…
Baxter: “The commissioners entertained the idea of vetting out the best way to codify in city code rules for mobile food carts because it’s become a lot more prevalent in recent years, Soldotna didn’t used to see any and now we’ve two or three each year for several consecutive years and we expect that trend to continue and so other municipalities in the state such as Anchorage and even Homer they already have policies specific to these types of businesses in place because they have some unique needs and unique challenges and rather than applying our existing codes in a patchwork fashion to these new businesses they’re going to look at bringing something to the council in the future to maybe codify a more comprehensive approach.”
